My beef stew sends me on a day dream
If I’ve had a bad day, or the weather is gloomy and blah, nothing says feel better than comfort food. I knew that I wanted a meal to hug me from the inside out and this meal was gonna do just that. I went to work and couldn’t stop thinking about going home to cook this Stew. Only because the weather man was predicting a snowstorm and I wanted to be good and ready! I wanted something hearty and healthy. Normally I would run to my Shepard pie. But the thought of all that cheese helped me change my mind. I was going to try something different and add some home-made cilantro dumplings. But I felt like that was a bit much. Maybe this weekend.
There are many different versions of stew but I wanted to incorporate my Spanish side and my southern side. Now most people add fresh homemade Sofrito to their stew. I was being lazy. This recipe is by far one of my favorites! It’s cozy and comforting. Nothing says comfort and winter like a living room picnic. Join my visual day-dream for a moment please….* day dreaming* My kitchen smells like a cozy log cabin in the Poconos. Dinner is done, the fire-place is going. I just laid out my off white sheep skin rug and I poured a glass of red wine. I have Sade playing in the back ground and she’s serenading me.

In my apartment I am in my own personal get away. I’m in my own moments of solace. I’m about to have a fantastic comforting dinner. With this type of atmosphere who needs dessert? I hear the stew bubbling. It snaps me back to reality. It was a beautiful day dream, I can’t lie lol. So I plate up and its time to eat. I’m savoring every bite because well it really does taste that darn good!. I was enjoying this stew so much that I can’t even remember what I was watching on television. I almost licked the bowl! I kid I kid lol.. I might as well have, that bowl was so clean for shame :p

What your beautiful self will need:
1 pack of beef chuck or beef stew meat
1 Yellow spanish Onion
1 red bell pepper
1-2 fennel bulbs
1 leek stalk
3-4 stalks of celery
3-4 sticks of carrots
1 can of fire roasted tomatoes
1 small can of tomato paste
4 pieces of garlic from the clove
2 red potatoes
2 yukon gold potatoes
snow peas *optional* i put it in mines 😉
3 sprigs of thyme
sprigs of rosemary
2 bay leaf
1 bunch of cilantro
1 teaspoon of capers
kosher salt and pepper to taste
red pepper flakes
1- 1/2 cups of flour
1-1/2 cups of vegetable or beef stock
1 cup of red wine *optional*
cooked jasmine rice
Cut all your vegetables in medium chunks don’t worry they will go down in size when they cook, cut your potatoes into square chunks medium size.
your beef should already be cut into chunks from the pack but if it’s not go ahead and cut them your self.
Pour your flour into a bowl and season it with salt and pepper mix well. Season your beef also with salt and pepper and the garlic powder. Mix well. Add some olive oil to your pot. The same pot your going to cook your stew in * you want all the flavor to stay in one pot :). Once the olive oil is hot turn your heat down to medium high. Dredge your beef in the seasoned flour and place some of the beef in the pot. You might have to brown the beef in batches. You’re not cooking the beef thoroughly your just browning the beef on both sides. Once the beef is brown remove with a slotted spoon and place on the size. add more olive oil if needed.
Once all the beef is browned. Add you onions,shallots, red bell pepper,leeks,and fennel. sauté until fragrant. Once you smell the veggies add your garlic.
Mix again. Once that is done now you add your beef. Mix well add your carrots,celery,potatoes, fire roasted tomatoes, tomato paste,stock ,red wine and capers. Mix well. everything should be covered in the liquid if it’s not covered add a little bit more stock. Add your rosemary, thyme, bay leaf and salt and pepper and red pepper flakes stir. *I love a kick in my stew you can put as much or as little red pepper flakes as you want*. Place a cover on it. Turn the heat low. The key to great stew is tender meat and great flavor. You’re gonna cook the stew for about an hour and 15 mins. Be sure to stir about every 15 mins to be sure it doesn’t stick to the bottom or run out of liquid. At the last 5-6 mins of cooking you want to add your cilantro. If you add it too soon it will just turn to mush and you will lose the color and flavor.
Ok your hour and 15 minutes are up to test the tenderness of the meat here you can use a fork.Tender beef? YEEAASSSSSSS chile! Get ready to throw down! your potatoes should also be tender.
*Note* if you like a little bit of a bite to your potatoes then add them about 50 mins in to cooking your stew, don’t forget to stir and put the lid back on.Don’t forget to remove the thmye sprigs and the bay leafs.
*Note * when adding salt to your stew remember less is MORE. Taste it before adding more and give some time for the flavors to actually grab the stew.
You can eat the stew over rice or by itself. You can even get fancy and make honey butter biscuits. Go the extra mile! Its only good food :D!
